About Sake (/sa:ki:/ /sa:kei/)


In general, Sake is a Japanese alcoholic beverage made from rice or a Japanese rice wine. However, differ from true wine, sake is made through a brewing process more like beer.
Like wines, a sake can be defined either as dry or sweet as its basic characteristics. Sake Meter Value is often used to determine whether a sake is either dry or sweet. As reliable a Sake Meter Value would be, acids and other elements can mask the real residual sugar amount. For example, a higher level of acidity can make a sweet sake taste drier than it actually is.

Junmai Shu
Made with only rice, koji (steamed rice) water.  The rice used must be polished to at least 70%.  Often a full and solid flavor profile, clean and well structured.

 premium ginjo-styled sake with a crisp, clear apple fragrance and refreshing flavour.

Ginjo
Brewed with labor-intensive steps, eschewing machinery for traditional tools and methods, using highly polished rice (at least 60%) and fermented at colder temperatures for longer periods of time. Light, fruity, refined.

Dai Ginjo
Brewed with very highly polished rice (at least 50%) and even more precise and labor-intensive methods. 
Generally light, complex and fragrant.

An overall delicate flavor with fine lines of fruity lightness spreading nicely across the tongue in crisp waves, accented by a balanced fragrance. The recesses of flavor are clear and sharply defined.

Honjozo
Made with rice, water and a very small amount of pure distilled alcohol to help extract flavor and aroma.

Nigori
An unfiltered sake that preserves the fresh flavor of the moromi (the fermenting mixture of rice, water, koji, and yeast) for a crisp, vibrant presence.

Nama
Draft sake and is purified not by heat pasteuration but rather through micro-filteration
